Pomegranate - Quince Vinaigrette |
Thanks to Glenn Ann and her mission of trying to find a way to get her 7 year old granddaughter to eat healthy greens, she created a perfect combination of tangy & sweet salad dressing.
Since this is the ONLY salad her grandaughter will eat, it should be a hit for lots of kids! So give it a try so you too can score big with the kids and celebrate your victory!!
1/2 Cup Pomegranate-Quince White Balsamic Vinegar
1/4 Cup Roasted Walnut Oil
1/2 Tablespoon Dijon Mustard
1/2 Tablespoon Honey
1/4 Teaspoon Kosher Salt
Pinch of course black pepper
Blend to taste (I don't measure) pomegranate Quince, walnut oil and about a teaspoon Dijon mustard.
Blend with whisk until emulsified.
Blend in honey (about a teaspoon), salt pepper to taste.
Clean and Prepare your greens (red leaf lettuce with other varieties such as baby greens, baby spinach and/or baby kale).
Add feta and dried fruit in a chilled bowl.
Drizzle salad dressing around outside of bowl-not too much.
It's easier to add more dressing if needed. But you can't take it out.
Add Glazed Walnuts for that little bit of crunch (optional)
